Cookie Dough Fat Bombs

It’s summer time and there are lots of pool parties and BBQ’s happening in our hood. Not to mention our upcoming beach vacation in the next few weeks.

So, I have been trying to make better choices in effort to feel better about myself in a bathing suit. My least favorite summer outfit. My version of making better dietary choices is cutting out sugar, bread and going low carb. I am not super strict, my goal is just to conserve calories where I can like with sweet treats.

I do have quite the sweet tooth so I needed something to satisfy my chocolate cravings. I found this great recipe for Keto Fat Bombs posted by Lena Abraham on delish.com. They are pretty good for a substitute and if you like butter than you are in luck. You can really taste it in this version. I am not a huge fan of butter, so the taste is rich for me. Which is perfect because I can stop after one or two.

This recipe yields 30 yummy cookie balls, takes 5 minutes to prep and they are edible in one hour. Quick and easy is for me.

Ingredients

8 tbsp. (1 stick) butter, softened

1/3 c. Keto friendly confectioners’ sugar (such as Swerve)

1/2 tsp. pure vanilla extract

1/2 tsp. kosher salt

2 c. almond flour

2/3 c. Keto friendly dark chocolate chips (such as Lily's)

Directions

  1. In a large bowl using a hand mixer, beat butter until light and fluffy. Add sugar, vanilla and salt and beat until combined.

  2. Slowly beat in almond flour until no dry spots remain, then fold in chocolate chips. Cover bowl with plastic wrap and place in refrigerator to firm slightly, 15 to 20 minutes.

  3. Using a small cookie scoop, scoop dough into small balls. Store in the refrigerator if planning to eat within the week, or in the freezer for up to 1 month.
